Vinification

Grapes are hand-picked at the peak of their maturity. After soft de-stemming, fermentation took place in stainless steel tanks at a controlled temperature of 16-18°C. When the fermenting juice reaches optimum sugar/acidity balance, fermentation is stopped by cooling, in order to retain the natural sweetness and freshness of the wine.

Tasting Notes

TELAVURI white medium sweet wine is traditional for the Telavi region of Kakheti. Produced from the local white grapes, predominantly Rkatsiteli, this light straw color wine presents a harmonious balance between the sweetness and sourness, enabling nice match with fruit salads, cakes, and strong flavored soft cheese.
